Bengali Style Vegetable Fried Rice







This Bengali style vegetable fried rice is the most common fried rice prepared in Bengali household with slight difference.Its quick and easy and makes a perfect accompaniment  with Chicken Gravy.I served it with Chicken Gravy With Coconut Milk.

Preparation Time - 15 min and Soaking Rice - 30 min - 1 hr
Cooking Time - 10-15 min

Ingredients:-

1. 1 cup Basmati Rice.
2. Mixed vegetables ( carrots,peas and beans)
3. Whole spices (1 bay leaf + 1/2 teaspoon shah jeera + 1/4th teaspoon whole black peppercorns/gota golmorich + 2 cloves /lobongo+2 green cardamom/elaichi + 1/2 inch cinnamon )
4. Salt as per your taste.
5. Sugar as per your taste ( I used around 1 tsp )
6. Water as required (I needed initially 1 and 1/2 cup + 1/2 Cup+ little more sprinkle )
7. 1 teaspoon ghee or clarified butter + 1 -2 teaspoon oil.( I used vegetable oil )
9. You can also add minced ginger 1/2 teaspoon and 1 slit green chilly with the whole spices ( optional,I did not add this time ).
10. You can also add extra 1/4 th teaspoon of garam masala (optional, I did not add this time ).
11. You can also add few fried  Raisins and Cashews for garnishing (optional)


Preparation:-

1. Clean and wash the Rice several times with water and then soak the rice for 30 min to 1 hour in water.Drain the water and then let it dry or you can spread it on a plate and let it dry.( if its not fully dry do not worry you can still make the fried rice with it ).
2. Steam or Boil the mixed vegetables with little salt and keep aside.

Cooking:-

1. Take a deep bottom utensil and add ghee + oil ,when the oil is warm add the whole spices and bay leaf,let then sizzle in the oil.
2. Next add the Rice and fry it until you hear a "chit chit " sound which indicates that the rice is fried.
3. Now add 1 and 1/2 cups of water + salt + sugar and bring it to a boil ,then turn the heat to the lowest possible range and cover and simmer the rice.
4. After sometime check and see,if the rice is not cooked yet and the water  dried up, then again add water as needed ,fluff up the rice with a fork or spoon and simmer on very low heat covered til the rice is done.( I always start with 1 and 1/2 cups water and then as needed I add water and simmer on a very low heat ,this prevents the rice from turning mushy).
5. Lastly add the steamed vegetables and garam masala (if using )when the rice is done and then mix gently with a spoon.Switch off and take it off the flame,keep it covered for 2-3 minutes before serving.You can garnish it with fried Raisins and Cashews.
