Chicken Gravy With Coconut Milk

This Chicken Gravy I prepared with Spices,Coconut Milk and  Kaffir Lime leaves.Its fragrant and spicy and sure to woo your hearts.Do give it a try and you won't regret :-).

Preparation Time - 15 min
Cooking Time - 40-45 min

Ingredients for Chicken Marination:-

1. Around 500 grams of Chicken with bones.
2. 1/4 th teaspoon of turmeric powder
3. 1/4 th teaspoon of Paprika or kashnmiri chilly powder.
4. Salt as per your taste.
5. 1 teaspoon of coriander powder

Ingredients for Chicken Gravy with Coconut Milk.

1. 165 ml of Coconut Milk ( I used canned coconut milk ).
2. 2 cups of finely chopped Onion.
3. About 1 and 1/2 inch of ginger crushed in a mortar and pestle (hamaldista ).
4. About 6-7 garlic cloves half crushed.
5. 4-5 kaffir lime leaves ( I used dried ) better if you can get fresh or use Gondhoraj Lime leaves.
6. Whole spices ( 1/4 teaspoon of whole black Peppercorns  + 1/2 of a Star anise or Annashipu )
7. Dry roasted spice mix ( 1 tablespoon coriander/dhaniya seeds + 1 teaspoon of Cumin seeds + 2 green cardamoms/elaichi  + 2 cloves/ lobongo + pinch of nutmeg and javetri ).
8. 1/2 tablespoon of Palm sugar or as per your taste,if you cannot get hold of palm sugar use sugar as per your taste.
9. Salt as per your taste.
10. Fresh chilly 1-2 as per your heat tolerance.
11. 1/4 teaspoon each of turmeric powder + paprika or kashmiri chilly  powder ( for more heat you can add 1/4 teaspoon of cayenne or red chilly powder ,but I did not add ).
12. Oil ( I used Coconut oil ) you can use peanut oil or vegetable oil or any other cooking oil.
Preparation:-

1. Marinate the chicken with all the ingredients under marination and keep it aside.
2. Chop and crush all the vegetables as stated in the ingredients for chicken gravy with coconut milk.
3. Dry roast ,cool down and grind the spices mentioned under point 7 of ingredients for chicken gravy.

Cooking :-

1. Take a deep pot utensil and add oil,let the oil heat up ,then add 1/4 teaspoon of whole black peppercorns or golmorich and half star anise and let them infuse their flavours into the oil.
2. Next add the crushed garlic cloves and fry til it takes a light brown colour. Then add the onion and fry til golden brown.
3. Now add the crushed ginger and fry for 40-50 second and add the marinated chicken.
4. Along with the chicken marinate also add turmeric powder,paprika or kashmiri chilly powder and cayenne or red chilly powder and mix everything together.
5. Cook covered checking intermittently so that the spices do not get burnt til oil seeps out.
6. Next  add the coconut milk and simmer on low covered,checking intermittently ,the coconut milk will thicken.
7. After sometime open the cover and let it simmer on low heat. The coconut milk will thicken and oil will seep out from all sides. Check the chicken if it is cooked or not,Add the palm sugar and salt along with the kaffir lime leaves and mix.
8. Lastly add the dry spice mix which we prepared  and the fresh chilly and mix.
9. The Chicken gravy with Coconut milk  is ready to be served:-) .I served it with Bengali vegetable fried rice,
