Peanut Chicken Indian Style





This Chicken curry is prepared with raw ground peanuts in a saucy base,Creamy and tangy is sure to win your taste buds.

Preparation Time - Chicken marination 1 hr other preparation 15 min.
Cooking Time -  Approximately 45 min.

Ingredients for Chicken marination:-

1. Chicken with bone 1.50 pound that is around 700 grams.
2. 2 fat garlic cloves ( around 2 teaspoon of crushed garlic ).
3. 1 inch ginger (around 1 teaspoon).
4. 1/4 teaspoon of turmeric powder.
5. 1/4 teaspoon of paprika.
6. 1 tablespoon yoghurt or curd.
7. 2 teaspoon sunflower oil or vegetable oil or peanut oil.
8. 1 teaspoon salt or as per your taste.

Ingredients for the Chicken Peanut curry:-

1. 2 tablespoon raw peanuts soaked in water.
2. 1/2 cup of chopped onion.
3. 1/2 cup chopped Tomato.
4. 2 fat cloves of garlic crushed
5. 1 fresh chilly chopped.
6. Dry roast and grind ( 1 teaspoon coriander or dhaniya + 1 teaspoon cumin + 2-3 cloves or lobongo + 2 green cardamom or elaichi + 1/4 black peppercorns) to this dry roasted spice/masala add very little javetri and nutmeg and then grind it and keep aside.
7. Whole spices ( 1 bay leaf or tej patta,1/4  black peppercorn or golmorich and 1/2 of a start anise or annashipu )
8. Peanut Oil - 2 tablespoon or any other vegetable oil.
9. Salt - 1/2 teaspoon or as per your taste.

NOTE - you can add red chilly powder or cayenne powder to increase the heat level in the dish.

Preparation :-

1. Marinate the chicken with all the ingredients under marination.
2. Add 1 tablespoon oil and fry the chopped onion til just brown,cool,grind it and keep aside.
3. Dry roast and grind the spices mentioned under point 6 of ingredients under Chicken Peanut curry.
4. Peel the skin of the soaked raw peanuts and grind with little water [ I was lazy to remove peels of all the peanuts :( ]

Cooking :-

1. Add oil let it warm.Then add the whole spices and let them infuse their flavours.
2. Add the crushed garlic ,let it turn just brown not burnt and then add the fried and ground onion paste.Cover and cook.Open intermittently ,mix,cover and cook.
3. When oil seeps out add the ground peanut paste,mix,cover and cook, intermittently open and see to check so that the spice mixture does not get burnt,cook til oil seeps out.
4. Add the marinated chicken ,mix properly cover and cook.This step is important,this is "bhuno or koshano ".Cover,cook and open intermittently to check and see and mix.After 6-7 min add the tomatoes and mix,again cover and cook.Let the oils seep out.Add sugar and salt and mix. Add very little about 1/3rd to 1/4th cup of water cover and simmer.When the chicken is done add the ground dry roasted spices,mix and let it stand 5 min before serving.
5. Garnish with chopped fresh chillies and serve with Roti or Rice or Paratha or even fried rice.

Chinese Style Vegetable Fried Rice Recipe

Chinese Style Vegetable Fried Rice




This Chinese style fried Rice recipe is best if prepared with leftover or previously cooked rice.I made this vegetarian version using mixed vegetables.

Preparation Time -Soaking Rice 30 min and other preparation 15 min.
Cooking Time - 10 min ( if prepared with leftover or previously cooked rice )

Ingredients:-

1. 1 cup Basmati or Jasmine Rice soaked in water 30 min and cooked and water strained and kept aside. ( previously cooked/ leftover )
2. Mixed vegetables steamed or boiled ( I used Beans, Peas,Corn,Carrot )
3.1/3rd cup Chopped Onion ( half of a medium sized onion )
4.1 and 1/4 teaspoon Minced garlic
5. Spring Onion chopped and white and green parts separated ( around  2 spring onions )
6. Dark soy sauce 2-3  teaspoon.
7. Red chilly sauce/sriracha 2 teaspoon or as per your heat tolerance.
8. Sugar 1/4 teaspoon.
9. Salt as per your taste ( I used around 1 teaspoon   )
10 Oil - sunflower or any vegetable oil 3-4 teaspoon.
11. Black pepper powder 1/4 teaspoon or to taste.

Preparation:-

1. Previously cooked rice.
2. Steamed or boiled mixed vegetables. I boiled the vegetables .For beans I first boiled in hot water for 3 -4 minutes and then quickly poured cold water .
3. Chop the spring onion and the onion.
4. Mince the garlic.

Cooking :-

1. Heat a wok or an utensil ( I used non stick ) and add oil,let it warm and then add the garlic followed by the onion and white part of the green onion. Let the onion just wilt ( NOT brown ).
2.Then add the Rice and break any crumbs.Mix lightly .Add the sauces,salt and sugar.Mix everything 3. Add the mixed vegetables and the black pepper powder and mix gently. Do not mix harshly or else the rice will break.
4. Sprinkle the green spring onion and mix .Switch of the burner and serve hot.

Bauru or Brazilian Sandwich Recipe






This Brazilian Sandwich or Bauru is a famous sandwich.Its Simple yet tasty.I tried making it In y cozy little home kitchen and we all loved it :).

Preparation time - Chicken marination min 1 hr to max 6 hrs,other preparation 10 min.(If you use ready made roasted/baked Chicken time can be curtailed)

Cooking Time - Melting the Mozzarella cheese by Bain Marie method or double boiler 10-15 min , baking Chicken 35 min (this time varies as per your oven ) and assembling sandwich 5 min.

Ingredients:-

1. Tempero Baiano Spice mix ( Ready made or Homemade ) check this link below for the homemade Tempero Baiano spice mix recipe :-

2.  Chicken (I used  boneless thigh ) around 300 grams.
3. 1 fresh garlic crushed.
4. 1 tablespoon olive oil.
5. 1 teaspoon salt or to taste.
6. Mozzarella cheese .
7. 1 Pickled Cucumber
8. 1 French Baguette bread
9. 1 beefsteak Tomato

Cooking/ Baking:-

1. Marinate the chicken with Tempero Baiano spice mix,crushed garlic,olive oil and salt.
2. Bake the chicken in a preheated oven at 400 degree Fahrenheit that is approximately 200 degree Centigrade for 35 min flipping it mid way around after 15 min until properly baked .[NOTE This time may vary as per your oven ].
3. Melt the Mozzarella Cheese following the Bain Marie or double boiler method ( see Picture ). I heated water in an utensil and on top of the utensil I placed a heat proof strainer/colander and on it I put a heatproof bowl containing the Mozzarella Cheese for melting.So that the cheese melts from the steam generated by the heated water below and is not touching the water directly.[See the PICTURES below to get an idea ].
4. Cut the French Baguette bread and then scoop out some inner part(crumb).In the scooped out part fill the molten mozzarella and on the other part add the chopped tomato.pickled cucumber and the baked chicken.Simple but tasty Sandwich is ready for serving.

NOTE:-

1. Usually roasted Beef is used but I substituted it with baked chicken.
2. I love little spicy so I added more of my homemade Tempero Baiano made with dried herbs and spices to the Chicken marinate.Adjust it according to your taste.

Homemade Tempero Baiano Spice Mix


This homemade spice mix is from the Brazilian cuisine.I used this for baking my chicken for the Bauru ( Brazilian sandwich).This spice mix is good for 2-3 people.The Link for Brazilian Sandwich is given below:-

Bauru or brazilian Sandwich

Preparation Time - 5 min.

Ingredients:-

1. 1 teaspoon dried Parsley
2. 1 teaspoon dried Oregano.
3. 1 teaspoon dried Basil
4. 1/8 teaspoon of Turmeric powder.
5. 1/4 teaspoon of Paprika or as per your heat tolerance.
6. 1/4 teapoon of cayenne or as per your heat tolerance.
7. 1/4 teaspoon of black pepper powder.

Preparation:-

Mix all the powder herbs and spices together and use it in your Brazilian dishes.If you wish you may grind it for a smooth texture as per your preference( I did not grind ).

Qutab is an Azerbaijani dish in which a filling is used and  a thin flat bread is folded in the form of a semi circle with the filling inside.This qutab recipe I prepared is the vegetarian version using herbs.You can also use meat as filling.Sometimes pumpkin is also used.This is the vegetarian version of qutab which I prepared.

Preparation Time - Dough preparation and resting 15 -20 min and other preparation 20 min(this can be done when the dough is resting ).
Cooking Time - Each Qutab takes about 5 min to cook.

Ingredients for dough:-

1. 1 and 1/2 cup all purpose flour or Maida.
2. 1/4 teaspoon of oil.
3. 1/4 teaspoon of salt or as per your taste.
4. 1 Egg.
5. Approximately 1 cup of water or as required to knead the dough.

Ingredients for the filling:-

1. 1/2 bunch Cilantro or dhaniya patta.
2. 1/2 bunch parsley.
3. 3-4 chopped spring onion ( separate the green and white parts).
4. Chopped Onion about 1/2 cup.
5. Feta cheese around 1/4th cup.
6. Black Pepper or Golmorich less than 1/4 teaspoon.
7. Salt as per your taste ( I added around less than 1/4 teaspoon )
8. Butter for serving.
9. Oil 1-2 teaspoon.

Preparation :-

1. Beat the egg and keep aside.

2. Knead the dough

Take a clean bowl and mix the flour with salt and oil nicely. Next make a hole at the centre and add the beaten egg  little by little slowly incorporating it into the flour and mix well. Next add the water as  needed to make a smooth dough and set aside for 15 - 20 min.

3. Chop the greens ( cilantro,parsley and spring onion ),also chop the onion.

4. Crumble the Feta cheese.


Cooking :-

1. Make the green stuffing/ filling by adding little oil to a non stick utensil and fry the onion and the chopped  white parts of the spring onion til wilted and transparent.

2. Blanch the cilantro,parsley and only the green parts of the spring onion, strain the water as much as possible.

3. Now take a bowl /plate and mix the crumbled feta cheese with the fried onion and blanched greens with salt and black pepper and keep aside.

4. Making the Qutabs

a) Make balls from the kneaded dough ( I made around 6 small balls ) and then roll out with a rolling pin into circular shapes as thin as possible.

b) I rolled out first and then used a stretch and swing kind of method to to thin out ,if you cannot then use the rolling pin to thin out as much you can.

c) Then add little filling and spread out and then make a semicircle and seal the ends properly.

NOTE - see the picture to get an idea.

d)Heat an utensil ( preferably an iron skillet ) I used my non stick and let it roast on it( no oil is used ).When one side is completed flip to the other side.When both sides are roasted smear little butter on top and serve hot.

e) You can serve it with a side of Yoghurt.
