Qutab Recipe or Kutab Recipe or Azerbaijani Flat Bread Recipe
Qutab is an Azerbaijani dish in which a filling is used and a thin flat bread is folded in the form of a semi circle with the filling inside.This qutab recipe I prepared is the vegetarian version using herbs.You can also use meat as filling.Sometimes pumpkin is also used.This is the vegetarian version of qutab which I prepared.
Preparation Time - Dough preparation and resting 15 -20 min and other preparation 20 min(this can be done when the dough is resting ).
Cooking Time - Each Qutab takes about 5 min to cook.
Ingredients for dough:-
1. 1 and 1/2 cup all purpose flour or Maida.
2. 1/4 teaspoon of oil.
3. 1/4 teaspoon of salt or as per your taste.
4. 1 Egg.
5. Approximately 1 cup of water or as required to knead the dough.
Ingredients for the filling:-
1. 1/2 bunch Cilantro or dhaniya patta.
2. 1/2 bunch parsley.
3. 3-4 chopped spring onion ( separate the green and white parts).
4. Chopped Onion about 1/2 cup.
5. Feta cheese around 1/4th cup.
6. Black Pepper or Golmorich less than 1/4 teaspoon.
7. Salt as per your taste ( I added around less than 1/4 teaspoon )
8. Butter for serving.
9. Oil 1-2 teaspoon.
Preparation :-
1. Beat the egg and keep aside.
2. Knead the dough
Take a clean bowl and mix the flour with salt and oil nicely. Next make a hole at the centre and add the beaten egg little by little slowly incorporating it into the flour and mix well. Next add the water as needed to make a smooth dough and set aside for 15 - 20 min.
3. Chop the greens ( cilantro,parsley and spring onion ),also chop the onion.
4. Crumble the Feta cheese.
Cooking :-
1. Make the green stuffing/ filling by adding little oil to a non stick utensil and fry the onion and the chopped white parts of the spring onion til wilted and transparent.
2. Blanch the cilantro,parsley and only the green parts of the spring onion, strain the water as much as possible.
3. Now take a bowl /plate and mix the crumbled feta cheese with the fried onion and blanched greens with salt and black pepper and keep aside.
4. Making the Qutabs
a) Make balls from the kneaded dough ( I made around 6 small balls ) and then roll out with a rolling pin into circular shapes as thin as possible.
b) I rolled out first and then used a stretch and swing kind of method to to thin out ,if you cannot then use the rolling pin to thin out as much you can.
c) Then add little filling and spread out and then make a semicircle and seal the ends properly.
NOTE - see the picture to get an idea.
d)Heat an utensil ( preferably an iron skillet ) I used my non stick and let it roast on it( no oil is used ).When one side is completed flip to the other side.When both sides are roasted smear little butter on top and serve hot.
e) You can serve it with a side of Yoghurt.
