Cholar Dal Recipe (With Onion and Garlic )

I make Cholar dal in different ways.This one I prepare with onion and garlic and other spices.For my niramish Cholar Dal with  no onion and garlic recipe  click the link below:-

Cholar Dal ( No Onion and Garlic )


Preparation Time - Soaking the dal 1 hr and other preparation 10 min
Cooking Time - 15-20 min

Ingredients:-

1. Cholar Dal/Pulses  or Channa Dal ( I used 1/2 cup )
2. Enough water for cleaning the dal and then soaking it.
3. Water to pressure cook the dal.
4. Salt as per your taste while pressure cooking the dal.
5. 1/4 th cup chopped onion.
6. 1 and  1/2 teaspoon of crushed ginger and garlic ( I used about 1 inch ginger and 2 medium garlic cloves ).
7. 1/3 rd cup chopped Tomato ( I used about 1 medium size Tomato )
8. 1/4 th teaspoon of whole black peppercorns or Golmorich.
9.  1/4 th teaspoon of cumin seeds/ jeera.
10. 1 dry red chilly.
11. 1 and 1/2 tablespoon of dry roasted cumin powder or jeera ( dry roast the whole cumin seeds ,cool and grind it to a powder )
12. 1- 2 fresh green chilly.
13. 1 teaspoon Ghee or clarified butter.
14. 2-3 teaspoon oil.
15. Garam masala powder ( 3 green cardamoms,3 cloves and 1/2 inch cinnamon ) grind it to a powder.
16. 1/4 th teaspoon of sugar or as per your taste ( this style Dal is bit sweet )
17. Salt as per your taste.
18. 1/4th teaspoon of turmeric powder + 1/4 th teaspoon of Paprika or kashmiri chilly powder and 1/4th teaspoon of cayenne or red chilly powder ( I did not use the cayenne powder )If you want more heat you can use it.
19. Pinch of Hing or Asafoetida.

Preparation:-

1. Clean and wash the Channa dal/Pulses several times and then soak in water for  an hour.

2. Drain the water after an hour and then pressure cook the channa/Cholar dal with about 2 cups water and little salt .( NOTE pressure cooker differs so whistles will vary ,this time I needed 2 whistles and then I let the pressure come down on its own but when I made this Cholar dal using another cooker last time I needed to give more whistles ,so this will depend on the cooker,to be on the safe side first give less whistle,switch off the flame ,put the cooker away , then let the pressure come down on its own and check the dal to see if more whistle is needed or not )

3. Keep the cooked dal aside.

4. Crush the ginger and garlic in a hamaldista/mortar and pestle,chop the tomato and onion.

5. Dry roast the cumin,cool and grind it to a powder.

6. Prepare the garam masala as stated in point 15 under ingredients.


Cooking :-

1. Take an utensil and add oil.Let the oil heat up and then add the whole black peppercorns ,the cumin seeds and hing ,be careful as the whole black peppercorns can splutter.

2. Next add the Onion and fry til it starts turning  brown ,then add the crushed ginger and garlic and stir fry it til the raw garlic smell disappears.

3. Next add the Chopped tomato along with turmeric and paprika or kashmiri chilly powder and mix everything together.Cook til the tomato melts.Add the sugar and mix.

4. Now add the pressure cooked dal and salt and mix. The dal is already cooked so adjust the water  consistency.Lastly add the Ghee,garam masala,fresh green chilly and roasted cumin powder and mix.

5. Serve the Cholar dal as a side with Kochuri,Luchi,Paratha,Roti or Pulao and even Fried rice.
