Kung Pao Chicken Recipe





This dry version of Kung Pao Chicken with vegetables and fried peanuts is sure to be a hit at your party,Its yummy and tasty and will leave you craving for more:).

Preparation Time - 10 min
Cooking Time - 15 min

Ingredients for Chicken Marination:-

1. Chicken ( I used skinless and boneless ) cut into bite size strips.
2. 1 teaspoon Chinese soy sauce.
3. 1 teaspoon Rice Vinegar.
4. Sprinkle of black pepper.
5. Salt as per your taste.
6. Corn flour 1 teaspoon (just to lightly coated).

Ingredients for Kung Pao Chicken:-

1. Mixed Vegetables ( I used Celery ,Mushroom,Red bell pepper or Capsicum,Snow Peas,
Spring onion )
2. Minced Garlic 1 teaspoon.
3. Minced Ginger 1 teaspoon.
4. 1 teaspoon soy sauce.
5. 1 teaspoon rice vinegar.
6. 1 tablespoon Peanuts.
7. Less than 1/4 teaspoon of sugar.
8. Salt as per your taste.
9. 1/4 teaspoon dry roasted and coarsely ground Sichuan Peppercorns.
10. 4-5 dry red chilly or as per your heat tolerance.
11. Peanut oil or any cooking oil 1 tablespoon.
12. 1 fresh chilly chopped.

Preparation:-

1. Marinate the chicken with all the ingredients mentioned under marination above and keep aside.
2. Chop the mixed vegetables and the fresh chilly.
3. Mince the garlic and ginger.
4. Dry roast ,cool and grind the Sichuan Peppercorns.

Cooking :-

1. Take an utensil ,add oil,heat up the oil and add the peanuts,fry it and keep aside.In the same oil break and add the dry red chilly and let it turn brown and then keep the chilly aside to be added later on.In the same oil add the marinated chicken and cook till a golden colour develops.

2. Keep the chicken aside and then if needed add little more oil and add the minced garlic as soon as  it turns brown(not burnt ) add the ginger followed by the mixed vegetables except the spring onion.Stir fry them.

3. Also add the rice vinegar and soy sauce .When vegetables are done but still has a crunch add in the chicken,peanuts,sugar ,salt as per your taste and the ground Sichuan Peppercorns.Give a quick mix,add the spring onion and the fried dry chillies you kept aside back into the skillet and mix .

4. Serve hot with garnish of some spring onion and fresh chopped chilly.
