Fresh Cranberries Rose Water and Walnut Muffins
These Muffins are made with fresh Cranberries,Rose water and Walnuts and just perfect for Valentine's any or just any other day.Enjoy with a cup of hot Tea or Coffee.
Preparation Time- 10min
Cooking Time- 30-35 min [NOTE -Baking time may differ according to your oven so keep an eye]
Ingredients:-
1. 1 cup all purpose flour or maida.
2. 1/4th teaspoon of salt.
3. 1/4th teaspoon of baking powder.
4. 1/3rd cup fresh Cranberries ( I used frozen and thawed )
5. 2-3 tablespoons of Sugar + 1/2 cup Sugar+ more for sprinkling on top.
6. Very little water.
7. Walnuts 1/4th cup.(broken into small chunks)
8. Rose Water - 1 to 1 and 1/2 tablespoon.
9. 1/2 cup oil + little more for greasing the baking cup cake utensil( I used sunflower oil ,you can use groundnut oil or vegetable oil or butter,if using butter bring it to a room temperature )
10. 2 room temperature eggs.
11. Some dried cranberries for garnishing.
Preparation:-
1. First take an utensil and add very little water and the cranberries and bring it to a boil.When the cranberries melts add the sugar ( I added about 3 tablespoons ,add more if cranberries are very tart ).
2. Prepare a semi thick chutney like consistency of the cranberries and let it come to room temperature.
3. Beat the eggs lightly in a bowl and keep aside.
4. Grease the baking utensil properly with oil/butter.
Cooking / Baking :-
1. Take the all purpose flour or maida in a bowl and add salt.
2. Take another bowl and mix sugar (1/2 cup )and oil / butter together and cream it until smooth.
3. Next add the beaten egg little by little ( NOT all together ) and mix gently.
4. Next add the cranberry and sugar semi thick mixture prepared and mix.
5. Add the Rose water also.
6. Now we will add the dry ingredients to the wet mixture but before adding the dry mixture add the walnuts to the flour and salt mixture and just before adding the dry mixture add the baking powder to the dry mixture and give a gentle mix and the add this dry mixture to the wet mixture little by little and incorporate it gently into the wet mixture.DO NOT over mix.
7.Next transfer the batter into the greased baking utensil and top it with sprinkle of sugar and dried cranberries.
8. Bake in the oven at 350 degree Fahrenheit or approx 180 degree Celsius for about 30 -35 minutes or until browning starts and a toothpick inserted into the centre of the muffins comes out clean.
