Egg Sambal





This Egg Sambal recipe is inspired from Malaysian cuisine.Its spicy and tasty and goes well with rice,roti or paratha.I was first introduced to Malaysian food when I ate at Pappa Rich ( Los Angeles )and loved their cuisine.

Preparation Time - 10 min
Cooking time - 20 -25 min ( 10 min boiling egg )

Ingredients:-

1. Sambal paste (see the link below for the homemade Sambal paste masala or spice recipe ):-

Malaysian Sambal Recipe

2. 2 eggs boiled.
3. 1 medium onion sliced
4. 1 teaspoon fish sauce.
5. 1/2 teaspoon Jaggery/gur or palm sugar or just sugar.
3. 1 teaspoon of salt or as per your taste.
4. Oil for cooking ( I used Sunflower Oil )
5. Water very little.

Preparation:-

1. Slice the onion.
2. Boil the eggs.
3. Prepare the sambal as per the direction given in the link above.

Cooking:-

1. Take an utensil ( I used Non stick ) and add about 2 tablespoon of oil. Let the oil warm up and then add the sliced onions.
2. Fry the onion until just brown and then add the Sambal paste. Fry til oil oozes out .Next add the fish sauce,Jaggery/gur or palm sugar or just sugar and mix.
3. Add salt as per your taste. Add the eggs and cook. Add little water if required.
4. Your egg sambal is ready to be served with hot steaming rice garnished with lemon grass.
