Carrot Halwa Recipe / Gajar ka Halwa/How to make Gajar ka Halwa





This Indian sweet carrot pudding or variously named as gajar ka halwa or gajorer halwa or carrot halwa requires few ingredients like carrots,milk,sugar,mixed nuts and ghee.Some variations can also be done which I have discussed at the end.Its easy but requires time.


Preparation Time - 15 min
Cooking Time - 1 and half hr.

Ingredients :-

1. Carrots ( about 4 and 1/2 cups grated )
2. Milk ( about 5 cups )
3. Ghee /Clarified butter - 4-5 tablespoon
4. Dry fruits and mixed nuts of your choice(I used Raisins,Cashews,Almonds,Walnuts,Pecans)you can also use Pistachios/Pesta.

Preparation:-

1. Grate the carrots and keep aside.

Cooking:-

1. Take a heavy bottom deep pan preferably non stick ( I used non stick ) and pour very little water(just to line the bottom of the utensil ) and then the milk and carrots.
2. Switch on the gas/stove top and let the milk and carrot mixture simmer . ( DO NOT be in a hurry ,this preparation is easy but takes time ).Keep the flame medium low and go on simmering the mixture in between scraping the sides and bottom and gently mixing it.
3. The milk will froth and slowly reduce.
4. Remember to keep an eye and be there or else milk can stick to the bottom.
5. When the milk has slowly reduced and very little is left at this point add the ghee/clarified butter,dry fruits and nuts and mix.
6. Ultimately the milk will disappear, continue cooking add the sugar as per your sweet preference and mix.
7. The colour of the carrot will also change to a darker hue/colour.
8. Serve warm .

NOTE :-

1. You can also use khoya towards the end to enrich the halwa.
2. Kalakand sweet can also be crumbled and added to this halwa towards the end to give a richer flavour.
