Easy Baked Chicken and Potato Recipe



This Easy Baked Chicken and Potato Recipe requires minimum effort to cook and can be assembled very fast,leave it  for marinating and the rest of the work for the oven to do.This recipe is good for busy weekdays yet its so simple and tasty.

Preparation Time - 5-7 min and marination 30 min to maximum 1 to 2 hrs ( boiling Potato 5 min )
Cooking Time - 40 min and 1-2 min broiling

Ingredients:-

1. 6 Chicken drumsticks with skin ( you may remove the skin if you wish )
2. 1/2 tablespoon olive oil or vegetable oil / sunflower oil.
3. 1 tablespoon sweet and spicy honey mustard dressing
4. 1/2 tablespoon apple cider vinegar or white vinegar.
5. 1/4 th teaspoon of turmeric powder
6. 1/4 th teaspoon of Paprika or Kashmiri Chilly Powder
7. 1/4 th teaspoon of cayenne or Red chilly powder ( if you want more heat ) I did not add
8. 1/4 th teaspoon of black pepper powder (Golmorich)
9. 1 teaspoon of crushed garlic
10. 1/2 teaspoon of dried Thyme.
11. Salt as per your taste. ( I added 1/2 teaspoon)
11. 1 Russet Potato cut lengthwise
12. Red onion and fresh chilly for garnish

Preparation:-

1. Clean and wash the Chicken drumsticks and then pat it and dry with a paper towel.Make slits on the chicken with a knife roughly at an angle of 45 degree so that the marinate can enter properly.
2.Take a mixing bowl and add all the ingredients from point  2 to 10 mentioned under ingredients and mix well. then add the salt and mix.
3. Lastly add the Chicken and use your hands to nicely coat the Chicken with the marinate .Leave it in the refrigerator ( NOT FREEZER) to marinate for 1-2 hours.

Cooking/Baking:-

1. Take a baking sheet ( I used an oven proof  iron skillet ) grease it with olive oil ( or vegetable oil/sunflower oil ).
2. Pre heat the oven to 400 degree Fahrenheit/ roughly 200 degree Celsius.( I started with initial 40 min baking )
3. Line the Chicken Drumsticks on the greased baking utensil ,reserve the left over marinate and bake in the oven.
4. When the Chicken is baking ,clean,wash and cut a Russet Potato ( I left some Potato skin on) or any Potato of your choice and just boil with water and little salt for 5 min.Drain the water and toss in the left over marinate.
5. After 10 min arrange the marinated Potato (with the leftover chicken marinate) with the Chicken and continue baking.
6. After total 20 min turn the Chicken and Potatoes and continue baking for 20 min.
7. After 40 min I broiled for 1-2 min ( this depends on your personal preference, I like it little charred so I broiled for 1-2 min ).
8. Garnish with sliced red onions and fresh chilly.

NOTE - Each oven differs so kindly keep an eye.The time may vary slightly.
