Chicken Gravy With Butter





This Chicken Gravy with butter,tomato and spices is perfect with Roti,Rice or Paratha.

Preparation Time - 10-15 min,Chicken marination around 30 minutes.
Cooking Time - 30 min

Ingredients:-

1. First prepare the garam masala or you may use store bought but in that case the taste will differ slightly. (grind 4 green cardamoms + 4 cloves/ lobongo + 1/4 th teaspoon whole black peppercorns or golmorich +pinch of Nutmeg or Jaiphal and Javetri or mace ).

2. Chicken around 500 grams (marinate with salt as per your taste and juice of 1 small lime )
3. 1 and 1/4th cup Onion paste.
4. 1 cup chopped Tomato
5. 1/2 cup Cilantro or Dhoney Pata
6. 2 teaspoon crushed Ginger in a mortar and Pestle /Hamaldista
7. 1 tablespoon crushed Garlic in a mortar and pestle /hamaldista
8. 1/2 teaspoon of Sugar
9. Fresh sliced chili as per your heat tolerance.
10. Whole spices ( 1 bay leaf and 1/4 teaspoon of whole black peppercorns )
11. Powdered spices ( 2 teaspoon coriander powder + 1/2 teaspoon each of turmeric and paprika or kashmiri chili powder ) you can  also use 1/2 teaspoon of red chilly powder or cayenne if you want more heat.
12. Oil ( I used sunflower oil you can use canola/Peanut oil ) around 1 tablespoon.
13. 1 tablespoon butter
14. Potatoes ( 2 medium quartered ) this is optional.
15. Salt as per your taste.
16. Water ( preferably warm) approximately 1 cup.

Preparation:-

1. Marinate the Chicken with salt and Lime juice and keep aside.
2. Prepare the garam masala if making homemade a stated in point 1 under ingredients.
3. Chop all the vegetables,slice the chilly and crush the ginger and garlic separately.
4. Cut the Potato if you are using Potato.

Cooking:-

1. Take a deep bottom cooking utensil and add the oil and butter .Let the butter melt,then add the whole spices ( Black Peppercorns and bay leaf ).
2. Then add the crushed Garlic,when the garlic becomes light brown then add the onion paste and fry til the oil seeps out .
3. Next add the crushed ginger and fry the ginger for around 50 seconds and then add the chopped tomatoes.
4. Along with the tomatoes also add the turmeric powder +Paprika or Kashmiri Chili powder and the Coriander Powder ( if you are also using Cayenne or Red Chili Powder then add it now ).Mix everything together and cover and cook til the Tomatoes melts and oil seeps out.( In between open and check and mix intermittently).
5. Next add the marinated Chicken  when the tomato melts and oil seeped out and mix.
6. Cover and cook for 5 minutes.checking intermittently ,then after 5 min if you are using Potatoes then add the Potatoes with the chicken and mix,again cover and cook for around 5 min ,checking intermittently.
7. When oil seeps out then add the sugar and salt and mix.After this add preferably warm water and mix.
8. Cover and cook til the Chicken and Potatoes are cooked .Add the Homemade Garam masala and mix.Just cook for 40 -50 seconds .
9. Lastly add the sliced chili and the cilantro.(If you wish you can crush the fresh chili and add it )
10.Serve it warm with hot steamed Rice /Roti/Paratha or Fried Rice. Enjoy :-).
