Mixed Vegetable Chow Mein Recipe





This Vegetable Chow Mein Recipe is easy to prepare and you can swap it with vegetables of your choice.

Ingredients:-

NOTE - Since the soy sauce also has added salt so be careful when you add salt so that it does not become too salty.

1. Chow Mein or Noodles ( boil it in water with little salt ,drain off the water and keep it aside )
2. Mixed Vegetables ( I used Carrots,Beans,Spring Onion, Spring Onion ,Red Bell Pepper or Capsicum,Bok Choy )you can use your choice of vegetables for this recipe.[I used about 1/3 rd -1/4 th cup of each vegetable ,only Bok Choy is 1 cup as it will reduce in volume.
3. Onion sliced 1/2 cup.
4. Minced garlic 1 and 1/2 teaspoon.
5. Sliced fresh chilly as per your heat tolerance.
6. Black pepper powder  sprinkle or as per your taste.
7. Rice Vinegar or White Vinegar ( 2 teaspoon during frying the vegetables + 2 teaspoon for Chow Mein )
8. Soy Sauce ( 2 teaspoon during frying the vegetables + 2 teaspoon in the Chow Mein )
9. Salt .
10. Red Chilly Sauce ( I used Sriracha ) as per your heat tolerance.
11. Oil ( I used Peanut Oil ) you can use any vegetable oil like Canola/Sunflower oil.

Preparation:-

1. Boil the Chow Mein with salt and water and drain the water.Keep it aside.
2. Now take a utensil add oil,when heated add garlic and fry til brown colour develops,next add the carrots and beans and fry,when done add the bok choy and bell pepper or capsicum and fry it.Lastly add the onion and fry til it just wilts yet crunchy,also add salt and 2 teaspoon each or soy sauce and rice vinegar or white vinegar ,black pepper powder and mix.
3. Keep the fried vegetables aside.
4. Now in the same utensil add little more oil ,let it heat up and then add the boiled chow mein into it followed by 2 teaspoon each of soy sauce+ rice vinegar or white vinegar and black pepper powder,if needed then add salt( since you already added salt during boiling and soy sauce is also salty ,so check and add if required ).
5. Mix everyting and then add the fried mixed vegetables and incorporate it well with the chow mein.
6. Add the sliced fresh chilly ( if you want more heat you can also add it when you are frying the garlic and save few to add now ) and garnish with Red chilly sauce.If you wish you can also add Tomato Ketch up or Sauce ( I did not add Tomato sauce this time ).
7. The Mixed Vegetable Chow Mein is ready to be served :-).Enjoy !!
