Chicken Malai Kabab or Malai Tangdi Kabab Recipe
Chicken Malai Kabab or Malai Tangdi Kabab this time I prepared with Chicken drumsticks .These Kababs are aromatic and made with cheese,hung Yoghurt/curd and other spices.
Preparation Time - First marination of Chicken 30 min and Second marination of Chicken 1 hr to 2 hrs.Other Preparation can be done in between and takes around 15 min.
Cooking/Baking Time - around 25 minutes ( Oven varies so keep an eye )
Ingredients for the Chicken Malai Kababs or Malai Tangdi Kababs:-
First Marination Ingredients:-
1. 6 Chicken drumsticks.
2. 3 teaspoon of Lime Juice.
3. Salt as per your Taste.
4. Black pepper powder little less than 1/4th teaspoon ( If you have white pepper powder you use it ).
5. 1 and half teaspoon of crushed ginger and garlic.
Second Marination Ingredients:-
1. 1/4th cup hung yoghurt/curd
2. 1/4 th cup Mozzarella Cheese or you can use some shredded regular amul cheese if you do not get Mozzarella.
3. 1 tablespoon Cashews ( I used dry roasted and salted )
4. Ground spice mixture ( 4 green cardamoms+ pinch of Nutmeg/Jaiphal and Javetri/ Mace)
5. Cilantro 5 -6 springs
6. 1 Fresh Chilly ( I used Serrano ,you can use Thai or Indian Chilly for more heat or Jalapeno for less heat )
7. 1 teaspoon oil ( I used Peanut oil you can use sunflower oil/vegetable oil/canola oil ) and more oil for greasing the baking sheet ( I used my oven proof Iron Skillet)
8. 1 teaspoon of ghee or clarified butter ( I used my homemade ghee )
9. Salt as per your taste ( since the cashews+ cheese + 1st marination has salt use salt cautiously this time )
10. 3 fat garlic cloves
NOTE - I do not like to use corn flour here but if you want you can add 1 teaspoon of cornflour.
For Sprinkling on the Chicken after its baked :-
1. Chaat Masala Sprinkle ( optional but it adds a zing )
2. Black Salt Sprinkle ( optional but it adds a zing )
Preparation:-
1. Clean the Chicken with water and then dry ,with a paper towel ,next cut slits on the Chicken at an angle of 45 degrees so that the marination can enter into the chicken properly with all the ingredients mentioned under 1st marination and keep in the refrigerator for half an hour.
2.Next ground the cashews and the spice mixture (point 4 second marination ingredients).
3. Make a paste of cilantro,garlic and fresh chilly(if needed add very little sprinkle of water )
Cooking/Baking:-
1. First for the second marination crumble and knead the cheese smooth,then to this add the mixture of Cashew and spice mix which you have ground.Then add the Yoghurt and the cilantro+garlic+fresh chilly paste along with 1 teaspoon oil and 1 teaspoon ghee or clarified butter and make a smooth paste.Add salt ( the first marinate has salt so add it cautiously).If you are adding corn flour add it here now.
2. Next take the chicken drumsticks ( Tangdi ) out of the first marination and then massage it properly with this second marinate and leave it in refrigerator for about 2-3 hours.
3. After 2 hours pre heat the oven to 400 degree Fahrenheit (around 200 degree Celsius)and grease the baking sheet ( I used my Cast Iron Skillet) and arrange the Chicken drumsticks removing any extra marinate.
4. Bake for 20-25 min ( after 10 minute turn the chicken to the other side) then I broiled high for a minute,turning in between.(you may choose not to broil as per your preference)
NOTE - Oven varies so keep an eye,when by inserting a fork into the Chicken the juice runs clear from the chicken then you know it is done,as per your preference choose how much you want it to be charred.
5. Your Chicken Malai Tangdi Kabab will be ready to serve.You may sprinkle Chaat Masala and black salt on it for added zing,I served it with Lime,Onion and Green Yoghurt Dip.
