Olive,Garlic and Rosemary Bread Rolls/Pinwheels

Olive,Garlic and Herbs Bread Rolls/Pinwheels






This Bread is Mediterranean inspired .Its perfect for morning breakfast or evening snacks warm and freshly baked and goes well with a cup of hot coffee or tea.

Preparation Time - For the bread dough to rise around 1 hour or until its double in size. Its weather dependent so keep an eye on whether the dough has double in volume. Other preparation activating yeast around 10 mins and rest of work 10 mins.
Cooking Time- 20 mins baking time ( NOTE - Oven varies so this time might vary so keep an eye on the bread rolls when it starts turning brown ).

Ingredients:-

1. 2 and half cups of all purpose flour or Maida.
2. 1 teaspoon of active dry yeast.
3. olive oil ( It will be required at different stages so the quantity I will mention as we proceed )
4. 1/2 teaspoon of salt
5. 1 teaspoon sugar.
6. 1 cup lukewarm water + 1 tablespoon water.
7. 1 tablespoon dried Rosemary + more for garlic oil and sprinkling on the bread rolls.
8. Garlic  3-4 big cloves minced .
9. 1 tablespoon Butter.
10. Garlic powder for sprinkling.
11. Olives 8-9 minced ( use any olives of your choice )I used Kalamata olives

Preparation:-

1. Warm 1 cup water .It must me Luke warm NOT hot or else the yeast will not activate.
2. Activate the Yeast to make the dough.
3. Knead the dough and leave it for rising.
4. Mince the Olives and Garlic.
5. Prepare the garlic oil.

Kneading , Cooking and Baking ( EXPLAINED IN 4 STEPS AS FOLLOWS )


STEP 1 ( ACTIVATE YEAST AND KNEAD DOUGH )

1. Warm 1 cup water and to it add 1 teaspoon sugar and add 1 teaspoon yeast and lightly mix and leave it for 8-10 minutes to activate the yeast.When it bubbles up that means its activated.

2. Take a big bowl and add 2 and half cups of all purpose flour ,1/2 teaspoon salt and 1 tablespoon dried Rosemary leaves and lightly mix.

3. After  the yeast is activated add 1 teaspoon of Olive oil to the yeast and mix and then pour this yeast solution into the dry flour mixture little by little and mixing and knead lightly.

4. You may need an addition 1 tablespoon of water to form a smooth dough . DO NOT add all the yeast solution at one time.Make a hole in the middle of the flour mixture and little by little add the yeast solution and incorporate the flour and knead.

5. When done add 1/2 teaspoon of olive oil to smooth dough and grease the bowl and leave it covered  for the dough to rise.

NOTE -  I usually keep this covered dough in my OVEN switching on the Oven Light NOT the oven. Please DO NOT switch the oven on ONLY  the oven light will be on.I kept it for an hour .Keep an eye until the dough doubles in size .Its little weather dependent.

STEP 2 (MAKE THE GARLIC OIL)

1. Take an utensil and add 1 tablespoon olive oil and 1 tablespoon of butter and warm it. Add the minced garlic and let it warm with the oil so that it infuses its flavours into the oil.Also add dried rosemary in the oil and keep it on a very low simmer and stop when the garlic just begins to turn light brown.I want the garlic little undone to be chewed with the bread.

STEP 3 ( MAKING THE BREAD ROLLS AND BAKING )

1. Take out the dough when it rise on your work table. Use a spatula or your hands to slide the dough from the bowl or little dry flour.

2. Next make the bread rolls as shown in the picture ( FOLLOW THE PICTURES ). With the help of a rolling pin or Belna or your hand spread the dough into a round circle an brush with olive oil and then make cut lengthwise with a knife or pizza cutter.

3. Next sprinkle the minced olives and garlic powder on each lengthwise cuts and roll up from one end and tuck the other end on the side.Then again brush the rolls with olive oil and sprinkle dried Rosemary.

4. Arrange the bread rolls on a baking sheet ( I used my old Pizza pan,I extensively use the pan for multiple baking and cooking other than making pizza )  lightly greasing the baking sheet and let it bake in the oven at 400 degree Fahrenheit ( Approx 200 degree Celsius ) for about 20 mins or until it turns light brown.( NOTE this time may slightly  vary from oven to oven )

5. I baked the bread rolls from down the second rack.

STEP 4 ( FINAL STEP )

1. When baked transfer them into a bowl carefully when still hot and pour the garlic oil which was prepared on the bread rolls and toss the bread rolls so that the bread rolls are nicely coaled with the oil.
