Cranberry Orange and Almond Muffins

Cranberry Orange and Almonds Muffins




These Muffins are perfect for tea time evening snacks or breakfast or even as treats .It has the fresh essence of orange and tangy dried cranberries and topped with nutty Almonds.

Preparation Time - 15 minutes.
Cook / Bake time - 30 - 35 Minutes ( This time may vary depending on your oven )

Ingredients:-

1. 1 cup all purpose flour or Maida
2. 1/4 teaspoon salt
3. 1/4 teaspoon baking powder
4. 1 cup Sugar [ I have tried with half cup sugar also and its okay for me but if you prefer sweetness use 1 cup ]
5. 1/2 cup Peanut oil or any vegetable oil + little more for greasing the cup cake baking pan
6. 2 Eggs ( room temperature )
7. 1/4 cup  freshly made orange pulp paste after discarding the seeds ( if your orange is very sour you may need to add more sugar, I did not add extra sugar mine was sweet )
8. 1/2 teaspoon Vanilla essence
9. 2 tablespoon dried Cranberries
10. 2 teaspoon cut orange peel ( remove the inside white threads as this can be bitter )
11. 7-8  toasted almonds cut into bits.
12. Cup Cake Baking Pan

Preparation:-

1. Take a bowl add to it 1 cup all purpose flour or Maida ,salt and baking powder along with cranberry and orange peel and mix lightly.Keep aside.
2. Take another bowl and beat the Eggs lightly.
3. Take another bowl and mix together peanut oil and sugar and cream it with a spatula or wire hand mixer.
4. Grease the cup cake pan with oil.
5. Toast the Almonds lightly as it will further bake in the oven.
6. Preheat the oven to 350 degree Fahrenheit ( approx 177 to 180 degree Celsius )

Cooking/ Baking :-

1. To the creamed mixture of sugar and peanut oil slowly add the egg mixture little at a time adding and mixing then again adding little and mixing and incorporate it into the mixture.Then add the Orange pulp and lastly the vanilla essence .
2. Next add the dry ingredients that is  the flour along with the cranberries and orange peel into the wet mixture and slowly incorporate it into it. DO NOT over mix  or else the muffins can turn hard.
3.Take the greased baking cup cake pan and pour the mixture equally into each and top it off with the roasted Almonds .Sometimes the muffin puffs up so make sure to grease the outside circumference of the cups also so that the muffins can be easily taken out once baked.
4. Next put the muffins to bake in a preheated oven at 350 degree Fahrenheit ( approx 177 to 180 degree Celsius ) for about 30 -35 minutes. (this time varies according to your oven ) so keep an eye when the muffins turn brown and check to see when a toothpick inserted into the center comes out clean or not.If its clean then muffins are done.
5. Enjoy your Home made muffins with a cup of  Tea or Coffee :)
