Quick Chicken Curry Recipe

This Chicken curry is quick and easy to make,to fasten the process I used my pressure cooker but you can also use an open pot.It is made with yoghurt,tomato,another aromatics and an ingredient used mainly in Chinese cuisine ( Sichuan Peppercorns ).

Preparation Time - 10 min
Cooking Time - 30 min

Ingredients for chicken marination:-

1. Chicken about 500 grams
2. Yoghurt 2-3 tablespoon
3. Turmeric 1/4 th teaspoon
4. Paprika or Kashmiri chilly less than 1/4th teaspoon
5. Sprinkle of black pepper
6. Salt as per your taste.
7. Coriander/Dhaniya powder 1 teaspoon.
8. 1/2 tablespoon Mustard oil ( or any other cooking oil )

Ingredients for the Chicken curry:-

1. 2 cups sliced onion
2. About 1/2 inch ginger thinly sliced into rounds
3. 1 and 1/2  teaspoon crushed garlic in a mortar and pestle ( hamaldista )
4.  Half Tomato chopped
5. 1-2 fresh chilly or as per your heat tolerance.
6. 1/4th teaspoon each of Paprika and Turmeric powder ( if you want more heat use Cayenne or red chilly powder along with these )
7. Whole Spices ( 1/4th teaspoon whole Black peppercorns,less than 1/4 th teaspoon of Sichuan Peppercorns(optional),2 green cardamoms,2 -3 cloves.1/2 inch cinnamon ,2 bay leaves,pinch of javetri )
8. For Garam masala grind (2 green cardamoms,pinch of javetri,1/2 inch cinnamon,2 cloves and 1/4 th teaspoon of whole coriander seeds/dhaniya) and keep aside.
9. Oil ( I used Mustard oil) ( 2-3 tablespoon)
10. 1/4 th teaspoon of Sugar.
11. Salt as per your taste.
12. 1-2 fresh chilly crushed or slit it ( I used whole )to increase the heat.
13. Potatoes ( halved around 2 )optional
14. Carrot 4-5 slices ( cut lengthwise )optional

NOTE - If you can't get Sichuan peppercorns you can still prepare the curry without it.

Preparation:-

1. Marinate the chicken with all the ingredients mentioned under marination and keep aside .
2. Chop/slice or crush  all the other ingredients as mentioned above.
3. Grind the spices mentioned in point 8 under ingredients for chicken curry.

Cooking :-

1. I used pressure cooker ( you can use an open pot cooking utensil ) and add oil.When the oil gets hot add the whole spices followed by the crushed garlic,let the garlic take a light brown colour then add the sliced onions and cook it till some of the onion takes a brown colouration.
2. Then add the ginger and fry 30 to 40 second followed by the tomatoes along with 1/4 th teaspoon each of turmeric powder,Paprika or kashmiri chilly powder. ( add Cayenne or red chilly powder if you want more heat ).Mix everything and let the tomatoes melt down.
3. Cover and cook ( NOT pressure cook just a lid ).When the tomato melts add the marinated chicken and mix everything.
4. Cover and cook the chicken till oil seeps out.Now add the salt and sugar along with the Potatoes and Carrots ( if using ) ,mix everything together,cook for a minute and then add water ( preferably warm ) I added around 1 and half cup( you add the water as per your pressure cooker if cooking in a cooker ) and then I cooked for 1 whistle ,took it off the flame and let the pressure come down on its own.

NOTE - 1.Every cooker differs so be cautious,I suggest start with 1 whistle,let the pressure come down on its own and then if required go for another whistle and let the pressure come down on its own.
2. If cooking in an open pot then cook covered checking intermittently till the chicken is done.

5. Lastly when the pressure has come down open the cooker and check to see if the chicken is cooked and then add the ground spice mix and fresh chilly and mix.Put it back on flame and cook for a minute.Take it off the flame ,rest covered for 1-2 minute an dserve hot with steame drice or roti  or even bread and enjoy :-).
