Chicken Salona or Saloona Recipe

Chicken Saloona or salona is a chicken curry with vegetables and loomi or dried lime and a spice mix called Bezar or Omani spice mix.I prepared my homemade Bezar or Omani spice mix as I love to prepare fresh spice mix in my home kitchen .

Preparation Time - 10 minutes
Cooking Time - 1hour

Ingredients:-

1.Chicken about 1.5 pounds that is around 700 grams.
2. Salt for marinating chicken as per your taste (I used 1/2 teaspoon ) and also for the curry ( I used 1 teaspoon ) as per your taste.
3. 1 cup minced Onion.
4. 1 teaspoon minced Garlic.
5.1/2 cup tomato chopped that is  half of a big tomato chopped.
6. 2 fresh green chilly ( I used Indian chilly).
7. 1 lengthwise sliced Carrot.
8. 3 medium Potatoes halved.
9. Bezar Spice mix ,I used my fresh homemade Bezar spice mix.The link is given below:-

Homemade Bezar Spice Mix or Omani Spice Mix

10. 2 green cardamom ground into powder.
11. 1/4 teaspoon turmeric powder.
12. 1/4 teaspoon Paprika or Kashmiri chilly powder.
13. Dash of Cayenne or Red Chilly powder or add as per your heat tolerance.
14. Water as needed for the curry consistency.
15. 2 dried Lime or Loomi.
16. Oil ( I used Sunflower Oil ) you can use oil of your choice.

Preparation:-

1. Prepare the Bezar or Omani spice mix if you are making homemade.
2. Marinate the chicken with salt and keep aside for 10 min while you do the other preparation work.
3. Chop and cut the vegetables.
4. Pierce the dried lime .( Be very careful when piercing the dried limes or you may hurt your fingers )

Cooking :-

1. Take an utensil ( I used  non stick ) and add about 1 tablespoon oil heat it .Braise the chicken on both sides and keep aside.
2. Add 2 tablespoon more oil and heat.Add the minced onion and fry til it turns brown but not burnt then add the minced garlic and fry till the raw smell disappears.Add the chopped Tomato and cover and cook til the tomato melts with the onion and garlic.
3. Next add the Potatoes and mix and cover.Cook for 1-2 minutes opening in between and mixing.Add the Carrots along with 1/4 teaspoon of turmeric powder,1/4 teaspoon of paprika or kashmiri chilly powder and dash of cayenne or red chilly powder and mix.
4. Add the braised chicken and mix everything together. Then add the pierced dried lime and mix and cover and cook for 1-2 min.
5. Next add the cardamom powder along with the Bezar spice mix and reserve about 1/4 tsp of the Bezar spice mix to add later.
6. Then mix everything and add preferably warm water and salt and let it come to a boil and then low the flame and simmer covered til the chicken and potatoes and the  carrots are cooked.
7. When done switch off the flame sprinkle the rest of the Bezar spice mix and the green chilly(if you want you can slit the green chillies for more heat ) and gently mix,cover and rest it for 5 minutes before serving it with hot  steamed rice or bread.
