Mixed Vegetable or Panchmishali Sobji ( No Onion No Garlic )
This dish is very easy and can be prepared with your choice of vegetables but I highly recommend Potato,Brinjal and Pumpkin along with other veggies. serve it hot with Roti,Paratha or as a side with Rice and Dal.
Try to avoid Capsicum/Bell pepper as then it will dominate the flavour.
Preparation Time - 10 min
Cooking Time - 20 min
Ingredients:-
1. Mixed vegetables ( I used Potato with the skin on r you can peel it ,Brinjal or Eggplant,Jhingey or Ridge gourd or Sinqua,Sheem or Broad Beans or Faba Beans,Yard long Beans or Borboti ,Pumpkin and Carrot ).
Approximately 1/4 th cup each [see pictures for approximate measurements ]
2. Cilantro about 10 twigs
3. 1 Indian chilly or you can use any chilly of your choice.
4. 1/4 teaspoon Methi or Fenugreek seeds
5. 1/4 teaspoon of Nijella or Kalojeere or Onion Seeds.[ you can skip the nigella if you want to avoid onion seeds for the no onion no garlic version )
6. Less than 1/4th teaspoon of Turmeric powder.
7. Salt 1/2 teaspoon or as per your taste.
8. Water as required.
9. Oil ( about half tablespoon )
Preparation:-
1. wash the vegetables properly and if you leave the potato skin on scrub and remove any mud adhering to it.Chop the vegetables as shown in the picture length wise.
2. Slit the Chilly.
Cooking :-
1. Take an utensil ( I used non stick ) and add oil.Let the oil warm up and add the Kalojeere or Nigella and the Methi.seeds Low the flame and let the spices infuse their flavours in the oil.
[NOTE - you can also add 1 green chilly and 1 dry red chilly in the oil ,I did not add it ]
2. Next its very easy just keep on adding the vegetables which will take longer to cook followed by the ones which cooks fast.( like Potato and carrots followed by the rest ).
3. Cover and cook. Add the turmeric powder mix and stir and cover.Check to see intermittently that the vegetables are not getting burnt. Pour in the water drops collected inside the lid back into the vegetables .Also add the salt.
4. If needed just sprinkle water and then cover and cook DO NOT pour water or else veggies will become too mushy.
5. When the vegetables are done just add the chilly and the chopped cilantro .Cover switch off the flame let it stand for 1-2 minutes so as to incorporate the aroma of the fresh cilantro and the chilly into the vegetables.
6. Serve it hot with Roti or Paratha or Rice and Dal.
