Doi Mach/Doi Salmon/Fish in Yogurt gravy

Doi Mach or Doi Salmon or Fish in Yoghurt Gravy





This dish is tangy and spicy and goes well with Rice or Fried Rice


Preparation time - 15 mins
Cooking Time - 25-30 mins

Ingredients:-

1. Fish fillets ( 2-3 ) [ I used salmon ,you can use Rohu,Carp,Bhetki,Tilapia,Cod,Bass )
2. Half Onion
3. 1 Garlic clove
4. Curd / Yoghurt - 1/2 cup
5. Make a mixture of 1 teaspoon Cumin powder,1 teaspoon Coriander powder,1/4 teaspoon Cayenne or red chilly powder,1/4 teaspoon of Paprika or kashmiri Chilly powder  and 1/4 teaspoon Turmeric powder with the curd.
6. Garam masala ( 3 green cardamom+2 Cloves +very little javetri or Mace + 1/2 inch Cinnamon )grind it.
7. Whole spices ( 1/4 teaspoon f whole black peppercorns and 1 bay leaf )
8. 1 teaspoon of Sugar
9. 1 teaspoon of salt  or to taste and about 1/4 teaspoon for marinating the fish or to taste.
10. Sprinkle of turmeric powder to marinate the fish.
11. kasoori methi or dried Fenugreek leaves 1/4 teaspoon.
12. Water aprrox 1 and half cup.
13. 1 Sliced Indian Chilly.
14. Oil for frying the fish and 2 tablespoon for making the gravy.

Preparation:-

1. Chop the Onion and crush the Garlic in a mortar and pestle ( Hamaldista ) and slit the Indian Chilly.
2. Make a mixture of the masala mentioned in point 5 under ingredients with 1/2 cup curd.
3. Grind the Garam Masala.
4. Fry the Fish in about 5 tablespoon of oil or more if required and then keep it aside and reduce the oil in the utensil to about 2 tablespoon.

Cooking :-

1. In the utensil ( I used Non stick ) add the bay leaf and whole black peppercorn to the 2 tablespoon of oil.Next add the crushed Garlic and let it turn light brown.
2. Ad the chopped onion and let it turn brown and crisp.
3. Low the flame and take the cooking utensil off the flame and add the beaten curd along with the masala paste in it and mix it properly with the fried onion and then put back on the oven on a low flame.This is done to avoid curdling of curd at a high flame.
4. next cook on medium flame until oil oozes out from the sides.
5. Next add the sugar and salt and preferably warm water.and bring to a boil and then low the flame and simmer it covered.
6. Open the lid and slide the fish into the gravy and cook for 5-6 minutes turning the fish after about 2-3 minutes.
7. Lastly add the garam masala,kasoori methi /Dried Fenugreek leaves and the Indian chilly.Cook for  1-2 minutes covered.
8. Adjust the water so that it has a gravy consistency ( thick ).Switch off the flame and let it stand for 2-3 minutes before serving :).
