Austrian Inspired Pasta Recipe
This pasta recipe is inspired from Austrian pasta recipe ( Spaetzle ),also the Germans have a Spaetzle recipe but here I used store bought Angel hair pasta and made some changes to suit me.
Preparation Time - 10 min
Cooking Time - 20 minute.
Ingredients:-
1. Angel hair pasta cooked as per package instruction.
2. 1 Egg
3. About 1/2 cup reserved pasta water.
4. 1 big Onion sliced.
5. 1 tablespoon oil and 1 tablespoon butter.
6. 1/4 th cup grated cheddar cheese.
7. Half of a Serrano or any fresh chili of your choice.
8. Black pepper powder.
9. Red chili flakes.
10. Salt about 2 teaspoon to boil pasta and 1/2 teaspoon in the pasta recipe ( use as per your taste).
11. 2 Spring onion chopped ( separate the green and white parts )
Preparation :-
1. Cook the pasta as per package instruction and reserve about 1/2 cup pasta water.Next drain the pasta and keep aside.
2. Slice the Onion.
3. Chop the Serrano.
Cooking :-
1. Take an utensil ( I used non stick ) and add oil and butter as it melts add the sliced Onion and fry til it starts browning from sides.I added sprinkle of salt to fry the onions faster.Then keep them aside.
2. In the same oil or add more if required add an egg and quickly add the pasta water and stir and add the cheese also. Do this under low to medium heat.Add the Serrano,spring onion white and green parts and also the fried Onions. [Reserve some Serrano,green parts of spring onion and fried onion for garnishing ]
3. Next add the pasta and fold in the sauce.
4. Add salt as per your taste and sprinkle dry red pepper flakes and black pepper powder and mix.
5. Pasta is ready to be served. Garnish with the reserved caramelized Onion,Serrano and green spring onion.
