Garlic Mushroom Noodles

Garlic Mushroom Noodles/Chow mein


This Noodle or Chow Mien has the aroma of garlic infused with fresh mushroom. Inspired from Italian garlic spaghetti pasta recipe.Can be served during Lunch,Dinner or evening Snacks.

NOTE - I used egg noodles You can use Angel hair pasta or spaghetti.

Preparation Time - 10 min
Cooking Time - 10 min

Ingredients

1. Noodle of your choice (I used egg noodles )its better to use thin noodles.
2. Enough water to boil the noodles ( as per package instruction)
3. Garlic ( 2 big cloves )as shown in the picture if using smaller clove you need more garlic cloves
4. Any Mushroom of your choice ( I used Button Mushroom )
5. Tomatoes ( I used cherry tomato ) or any other tomato .
6. Two spring onions or green onion
7. Few Parsley (4-5 twigs)
8. Green chilly ( I used Serrano ) use as per your heat tolerance
9. White vinegar ( about 1 tablespoon )
10. 1/3rd teaspoon red chilly flakes
11. Black pepper/ Golmorich for sprinkling as per your taste
12. 1/4 th cup grated Sharp cheddar cheese or any cheese of your choice like Parmesan or 2 teaspoon of butter.
13. Garlic Powder ( 1/3rd teaspoon ) or sprinkle it.
14. Salt  as per your taste ( I used 1 teaspoon for boiling noodles and less than half teaspoon for cooking the noodle )
15. Olive oil ( about 1 tablespoon ) or any oil of your choice like vegetable/rice bran/canola

Preparation

1. Boil enough water add salt and then boil the noodle as per package instruction ,drain the noodle under cold running water ,if you want you can add little oil to the noodle to prevent from sticking but I did not add.
2. Chop the mushroom after cleaning and washing and removing the outer skin into 4 quarters.
3. Dice the tomatoes into 2 halves if using big tomatoes chop into medium cubes.
4. Mince the garlic finely,slice the chilly and also chop the parsley and green onion/spring onion

Cooking

1. Take enough water in an utensil add salt and bring the water to full boil and drop in the noodles and follow package instruction. Mine took about 5-6 minutes.
2. Next drain the water and cool the noodle under cool tap water. If you like add a teaspoon of oil to the noodle to prevent sticking  I did not add the oil.
3. Take an utensil and add oil ( I used olive oil ) the when the oil is warm add the garlic so that it starts infusing the flavors with the oil becoming hot.
4. When the garlic is light brown add the slitted chilly infusing its flavours.  turn up the heat and add the tomatoes, mushrooms and white chopped part of the spring onion so that the musrooms gets a slight burnt appearance without releasing water. Check the pictures to get an idea.
5. Next bring down the heat and shift off the utensil from the flame and add the parsley,green parts of spring onion. ( Reserve little parsley and green part of spring onion for garnishing)
6. Add the noodle,little more than 1 teaspoon of white vinegar,salt as per your taste,garlic powder about 1/3 rd teaspoon (optional), red chilly flakes(as per your heat tolerance )and mix properly.
7. Next put the utensil back onto the heat on a medium flame and cook for 3 to 4 more minutes.
8. When nearly done mix in the grated cheese ( I used grated sharp cheddar cheese ) you can use Parmesan or any other cheese you like or even butter about 2 teaspoon if you don't like cheese and mix it.
9. Serve hot with garnish of parsley and green spring onion.
