Pasta With Chicken Balls



Pasta with meat balls is a classic Italian recipe.I made certain tweaks here,I swapped meat with Chicken and the chopped Tomatoes I fried In the oil til oil seeped out and then added water and the cooked chicken balls and let it simmer.For the Pasta Instead of serving plain boiled salted Pasta I served It on pasta aglio e olio (pasta with garlic and olive oil ) ,it tasted delicious :-)

Preparation Time- 15min and making the chicken balls 5-6 min

Cooking Time- around 1 hour

Ingredients for Chicken Balls  :-

1. 2 cups minced/keema Chicken
2. 1 egg
3. Minced fresh chilly ( I used around 2 teaspoon ) use as per your heat tolerance.
4. 2 and 1/2  tablespoon onion minced
5. 1 tablespoon parsley minced
6. 1 teaspoon minced garlic
7. Mixed Italian herbs 1/4 teaspoon
8. 1/2 teaspoon oregano
9. 1/4 teaspoon black pepper powder
10. 1 tablespoon Parmesan cheese
11. 1 and 1/2 tablespoon of Farmstead cheese a local cheese from my Farmer's market.(use cheese of your choice if you do not get these cheese)
12. Salt as per your taste.
13. 2 tablespoon bread crumbs for making slurry with egg and then again I added 4 tablespoon when making the chicken balls.( initially I start with 2 tablespoon of bread crumbs   and  1 egg slurry ,then as required I add more bread crumbs)
NOTE - I used store bought bread crumbs but fresh homemade is preferred.
14. Oil for frying the chicken balls. ( I used olive oil you can use vegetable oil ).


Ingredients for the Sauce /gravy :-

1. Minced garlic 1/2 teaspoon
2. 1/2 cup minced onions
3. 2 cups chopped tomato
4. 1 cup of tomato puree
5. 1/4 teaspoon Paprika or Kashmiri Chilly powder.
6. 1/4 teaspoon garlic powder or add 1 teaspoon total minced garlic instead of 1/2 teaspoon at the beginning into the oil
7. 1/2 teaspoon of sugar
8. Salt as per your taste.
9. 1 teaspoon  dried Basil
10.1/4 teaspoon black pepper powder
11. 1/8 teaspoon of garlic powder (optional )
12. Water as required to adjust the sauce/gravy consistency.
13. Olive oil or vegetable oil.

Preparation:-

1. Mince the onion,garlic,parsley and fresh chilly for the chicken balls.
2. Chop the tomato for gravy or the sauce.
3. Puree Tomato for the sauce.
4. Prepare the Chicken Balls.

Cooking:-

1. Take a flat bottom and add oil,when the oil is hot fry the chicken balls on a low to medium flame turning them til all sides are cooked and have a golden colour. ( do not fry on high heat because in that case the inside of the chicken balls will remain uncooked and outside will be brown ).
2. Take them out and drain them on a kitchen tissue.
4. In the same skillet add oil,let it heat up then add the minced garlic.
5.When garlic turns light brown add the onion and fry til pink or translucent not brown.Then add chopped tomatoes and salt.
6.Mix and cook covered til the oil seeps out checking intermittently.
7. When the tomato melts and oil seeps out then add the tomato puree along with Paprika and Kashmiri Chilly powder and garlic powder and mix.
8. Cook covered til oil seeps out checking intermittently ,then add the sugar and mix.
9. Add the chicken balls and mix lightly with the tomato gravy.
10. Cook covered checking intermittently and adding water as required little at a time so that the gravy does not dry up .( Do not add lot of water at a time ).
11. Simmer on a low flame til done,then add the dried basil,garlic powder and black pepper powder and mix.
12. Keep covered for 1 minute switching off the flame before serving on a bed of hot boiled salted Pasta.( I served it over Angel hair  pasta with olive oil and garlic ) and enjoy :-).

  1. This Garlic Shrimp Recipe is very quick and easy to prepare.Its inspired from the American cuisine,I did a little tweak by adding minced onion.This is a very super quick and easy recipe and goes well as a starter or as a side dish with Fried Rice.

  2. Preparation Time - 7 min
  3. Cooking Time - 10-15 min
  4. 1.1/2 pound shrimp ( marinate it with paprika+black pepper powder sprinkle + sprinkle of garlic powder or 1 teaspoon crushed garlic + salt + 2 teaspoon lime juice )
  5. 2. 2 tablespoon minced parsley
  6. 3. 5 garlic cloves minced ( around 1 tablespoon )
  7. 4. 1/2 cup minced onion
  8. 5. Lime juice ( 2 teaspoon or more as per your sour taste preference )[ I added about 1 tablespoon,I like it little sour ]
  9. 6.1 tablespoon butter.
  10. 7.Olive oil.
  11. 8.Salt as per your taste
  12. 9.Red chilly flakes
  13. 10.Black pepper powder
Preparation :-
  1. 1.Marinate the shrimp and keep aside.
  2. 2.Mince the onion,garlic and parsley.

  3. Cooking:-
  1. 1.Take an utensil ( flat bottom ) add oil let it heat up then add the marinated shrimps.
  2. 2. Let the shrimp turn pink on both sides then add the minced garlic and fry for 2-3 minute followed by the onion.Fry til the onion wilts and turn pink.
  3. 3. Then add the butter and let it melt,finish it with sprinkle of minced parsley+ black pepper powder + red pepper flakes.
  4. 4. Switch off the flame and add 2 teaspoon of fresh lime juice and mix( add more if you want more sourness ).
  5. 5. Garnish with extra minced parsley and its ready to be served :-)

Easy Calzones Recipe or Mini Calzones

Easy Calzone Recipe or Mini Calzones



These Calzones are from the famous Italian cuisine which are folded pizza.These I made are mini Calzones with Indian style stuffing with Potatoes,Cilantro,Onion ,Spices and also Cheese.

Preparation Time- For rising the dough about 1 and half to 2 hrs and other preparation 20 min.
Cooking Time- Baking Time 12-15 min but may vary depending on your oven.

Ingredients for dough:-

1. 2 cups all purpose flour or Maida + 2 teaspoon more flour added during kneading ( 1/2 teaspoon added 4 times ,do not add it all together,add when needed )
2.1/4th teaspoon of salt
3. 1 teaspoon of active dry yeast
4. 1 teaspoon of sugar.
5. 1 - 3/4 th cup Luke warm water
6. 1 teaspoon olive oil + 1/2 teaspoon olive oil.

Ingredients for stuffing :-

I made an Indian stuffing with Indian spice mix for my mini Italian Calzone. Fusion :)

1. Boiled Potatoes chopped about 1 and half cup.
2. Peas ( I used frozen thawed green peas )
3. Corn ( I used frozen thawed )
4. Cilantro ( 4-5 twigs )
5. Salt as per your taste ( I added half teaspoon )
6. Ketchup/Tomato sauce ( I added around half tablespoon )
7. Tandoori Masala/Spice mix ( I used ready made ) 1 and half teaspoon.
8. Chopped fresh chilly as per your heat tolerance.
9. Black pepper sprinkle.
10. Fresh Mozzarella cheese cut into cubes ( Use any cheese of your choice like grated or cubed cheddar )
11. 1- 2 teaspoon oil
12. Onion chopped about half cup.

Preparation:-

1. First take Luke warm water in a bowl ( NOT HOT ) and add the yeast and sugar into it and set it aside (7-8 mins ) til the yeast is activated.
2. Take a big bowl add the all purpose flour or maida ( 2 cups ) and add salt to it and mix gently.
3. When the yeast activates add 1 teaspoon of olive oil to it give  a gentle stir and then slowly add to the flour and knead it to a smooth dough adding 1/2 teaspoon of flour at a time when needed to knead a smooth dough. ( I added total 2 teaspoon of flour 1/2 teaspoon at a time for 4 times ).
4. Lastly add 1/2 teaspoon of olive oil to smooth out the dough and grease  the bowl.I keep the kneaded flour in the same bowl I knead the flour,less work for me :).
5. Cover and rest the dough til it doubles in size in a warm place ( I usually keep it inside my OVEN WITH ONLY THE OVEN LIGHT ON NOT THE OVEN ON ). It took about 1 and half hour to double in volume/size.
6.Boil the Potatoes ,chop it and also chop the vegetables.

Cooking/ Baking :-

1. Take an utensil ( I used non stick ),add oil and then add the onion.let it wilt and turn pink and then add the potatoes,peas,corns,tandoori masala,ketchup,black pepper ,chilly and salt .Give it a mix.No need to add the cheese now into the stuffing.Ad it when you stuff into the Calzone.
2. When stuffing is done set it aside to come to room temperature.
3. Next when the dough is ready. Expel out the gas and then make balls out of the dough.
4. With rolling pin roll out individual balls into disc shape,add little stuffing and cheese ,make it into a semi circle and then seal the ends and press the ends it a fork.Just poke with fork on each Calzone in 2-3 places.
5. I made about 6 small Calzones . [ see pictures to get an idea ]
6. Pre heat your oven to 500 degree Fahrenheit that is about 260 degree Centigrade and bake the Calzones for about 12-15 min til you get a brown crust on a baking dish.(I used my Pizza baking Pan)

NOTE - Oven varies  so timing may differ.Keep an eye.

Homemade Veggie Pizza Recipe

Homemade Vegetable Pizza




This homemade veggie pizza is loaded with veggies like fresh mushrooms,sun dried tomatoes,onions,spinach,olives,capsicum/bell peppers,jalapeno and off course cheese.

Preparation Time -  15 min and for dough to rise approx 1 and half hr - 2 hrs( wait til it doubles in volume )( I kept it for about 2 and half hours )
Cooking time - 15- 20 min [ Time may vary as per your oven ]

Ingredients for dough:-

1. 2 cups all purpose flour or maida + 3 teaspoon more flour during kneading adding 1/2 teaspoon at a time for 6 times and then more during dusting and rolling the pizza.(you may not require the extra 3 teaspoon of flour )
2. 1/2 teaspoon of salt or as per your taste.
3. 1 teaspoon active dry yeast.
4. 1 to 3/4 th cup Luke warm water (Sometimes you may not require 1 cup water just 3/4th cup will be alright,so add little water at a time to get the desired smooth pizza dough )
5. 1 tablespoon olive oil+1/2 teaspoon olive oil.
6. 1 teaspoon mixed Italian herbs (optional )
7. 1 teaspoon sugar.

Ingredients for partly homemade sauce:-

NOTE I used a partly homemade sauce and in the centre I used ready  made chipotle sauce[optional]

1. For partly homemade sauce 3 tablespoon tomato ketch up or sauce
2. 1 teaspoon garlic powder
3. Pinch of salt.
4. 1/4 teaspoon sugar.
5. 1 and 1/2 teaspoon oregano or Italian mixed herbs.

Ingredients for pizza toppings :-

1. You can use your choice of vegetables .I used ( Fresh Tomatoes ,sun dried tomatoes,onion,fresh mushrooms,capsicum/bell pepper,Jalapeno,Olives and spinach )
2. I used Cheddar Cheese but you can use Mozzarella as well.

Preparation.

1. First activate the yeast in Luke warm water with sugar.Let it bubble up ( 7-10 mins).
2. Knead the dough and keep it in a warm place to rise or double in size.
3. Chop the vegetables.

Kneading Dough/Cooking/Baking:-

1. Activate the yeast with Luke warm water ( NOT HOT ) with little sugar.In a big bowl take the flour and add the salt and mixed herbs (optional) and mix lightly.
2. When the yeast is activated add to it 1 tablespoon of Olive oil give a quick stir and add it to the flour mixture and knead to smooth dough.I added 3 tablespoon of flour while kneading the dough but not all together- 1/2 teaspoon at a time so in total 1/2 teaspoon 6 times.At last add 1/2 teaspoon of oil to grease the dough and the bowl.I use the same bowl for the dough to rise.
3. I usually keep the dough inside my oven with ONLY THE OVEN LIGHT TURNED ON NOT THE OVEN. DO NOT ON THE OVEN.
4. Prepare the sauce as mentioned under ingredients for homemade sauce by just mixing everything together and keep it aside.
5. When the dough doubles in volume then with the help of extra dusting flour take it out and then make it into a round shape and as shown in the picture make the thick crust by pushing it with your fingers towards the circumference.So a raised edge and central depression is formed.
6. Next apply sauce ( see picture ).I added in the centre (10 cm diameter Chipotle sauce ) [optional ]and rest area the partly homemade sauce.
7. Arrange your toppings on it.Sprinkle very little salt on the veggies .I arranged the spinach and the Jalapeno after adding the cheese.
8. Next bake the veggie pizza in the oven after preheating the oven at 400 degree Fahrenheit  or approx 200 degree Centigrade for 15 mins.This time may vary as per your oven so keep an eye until the crust browns little and cheese is bubbling.
9. Enjoy your hot homemade pizza.

NOTE - I added cheese after the toppings but it can be added first and then the toppings .
